And as I said, I don’t actually really care for beer (if you’re just tuning in – I’m a wine girl all the way), but that doesn’t stop me from spreadingon some butter and chowing down on two, or three…or four… slices of this homemade bread.

Since I’m not really a beer drinker, I usually go for a lighter beer; it adds the flavor but has less of the hoppy or deep dark beer flavor that some have (don’t you love how technical I am about beer …haha!). Some call 3 2 1 bread, some call it 123 beer bread, and at the end of the day it’s a beer bread recipe with 3 ingredients and there’s so much to love. You can alter the style and taste of your bread by changing the type of beer that you use in the dough. For instance, I’ve shown a very mild, light beer here, which creates a light, subtle loaf of bread that’s appealing to young kids. If you prefer a more pronounced beer flavor, use an IPA (pale ale) for moderate flavor, or a stout or dark beer for a stronger taste. Essentially, the bread will taste like a more mild, toned-down version of whichever beer you choose to use.

Make this yeast-free bread and serve it with chili or a hearty soup! To freeze the bread, wrap it tightly in plastic wrap, then again in aluminum foil, and store in the freezer for up to 2 months. Thaw on the counter overnight. Early bread and beer have exactly the same ingredients – water and cereal. The only difference was that the cereal was ground for bread. The yeast that makes bread rise and beer alcoholic entered the equation by accident; the mixtures were left open to the air, and wild yeasts on the wind got in. The yeast eats the sugars and multiplies (hence the rising) and produces alcohol. Sharp minds among you might ask why, then, isn’t bread alcoholic? That’s because it’s cooked off when it’s baked. Sadly.

In a medium-sized bowl, combine all-purpose flour, granulated sugar, baking powder, salt and thyme. Stir well.

It works well on the side of soups or stews, buttered or plain, and is lovely made into doorstop sandwiches with your chosen fillings or with melted cheese as grilled cheese sandwiches. Beer bread may sound a bit mad, but the history of beer and bread are inextricably linked, and their invention shaped the way our world was built. Seriously. In conclusion, Beer Bread doesn’t need to wait for hours to rise. It’s sort mix, dump and bake kind of bread!
